Ingredients
1 ¼ C yellow cornmeal
1 C all purpose flour
¼ C sugar
½ tsp salt
1 Tbsp baking powder
1 Tbsp baking powder
½ tsp baking soda
2 eggs

1 ⅓ C buttermilk
3 Tbsp melted butter
Oil for skillet

Preheat oven to 425 degrees.
Preheat 10 in. cast iron skillet adding enough oil to cover bottom of pan, about ¼ cup or less will do.
Whisk together dry ingredients in large bowl. Add 2 beaten eggs
and buttermilk. At this point if it is too thick I will add a couple Tbsp of water. It just depends on how much it soaked up.
Stir in melted butter. Pour in hot skillet.
Bake in hot oven for 20 to 23 min. Til very lightly browned on top.
Absolutely the best cornbread recipe.
I have perfected it over the years. My
family loves it with beans soup or chili.
