Best Chocolate Buttercream Frosting


              Best Chocolate Buttercream Frosting
INGREDIENTS:

1 cup Butter, softened (I use Salted, Butter) 1 lb. Box (4 cups) Powdered Sugar¾ cup of Hershey's Cocoa Powder
2 or more tablespoons of milk
2- teaspoons of vanilla




DIRECTIONS:Combine the Powdered Sugar and the Cocoa Powder in the mixing bowl.Mix the Powdered Sugar and the Cocoa Powder on low until it is completely combined.Add 2 sticks (or 1 cup) of softened butter and 2 teaspoons of Vanilla and mix until thoroughly combined.Add the milk 1 tablespoon at a time until you have the correct consistency.

Sloppy Joes

Homemade

2 lbs Ground Chuck
1 med onion
3/4 C ketchup
2 Tbsp. mustard
1/3 C sweet relish
buns

Fry and brown gr chuck when it is almost done add onion diced fine. Cook til onions are tender. Drain thoroughly in a mesh strainer into a bowl. (to pour on the fence line. Natural biodegradable weed killer) Reduce heat, add ketchup, mustard and relish. Stir, add a tiny bit of water til it is a consistency you like. Serve on buns. We add a slice of American cheese on ours. Goes good with chips, salad, or fries. Fast Supper. 

Guacamole


3 ripe avocados
2 t. Realemon juice
salt pepper
2 big Tbsp. salsa


Peel and mash avocados add lemon juice salt pepper and salsa. Stir it up and
serve with tortilla chips. Our current fav is On the Border Cantina thins with sea salt. Yum!

Pot Roast and gravy

         


Roast                                                   Cast Iron skillet
flour                                                       Crock Pot
salt                                                         
pepper
1 Tablespoon beef bouillon granules
2 C water
3 Tablespoons olive oil
potatoes, carrots, onions

Season roast with salt and pepper. Dredge roast in flour.
Heat a skillet med-high heat, put olive oil in skillet. Lightly brown roast on all sides. Mix water and bouillon.
Put roast in Crock pot add liquid, vegetables, cook on high 5 to 6 hrs til tender depending on size of roast.
When done carefully drain in saucepan. Mix 3 Tbsp cornstarch in half cup water stir well pour in heated roast broth stir til thickened, salt and pepper, pour back over roast and vegetables. Let cook about 30 min or so.
Serve with hot rolls and sweet tea Yum!

Sweet and Sour Meatballs

We call these grape jelly meatballs. Our family asks for these alot. 
This is my sisters recipe that she likes to make at halloween

2.5 lbs Gr. Chuck
salt, pepper, garlic powder
1.5 C Ketchup
1.5 C Grape Jelly

Break up meat in a big bowl sprinkle with salt, pepper, garlic powder.
Mix well.(I use my hands) Make into meatballs the size of a small egg.
I measure with an ice cream scoop.
I usually get 20 out of 2.5 lbs. Bake at 375 for 30 min uncovered.
Drain off grease. Mix jelly and ketchup with a whisk in a medium bowl
pour over all. Return to oven 15- 20 min.
Serve over white rice.

Awesome Meatloaf

1 1/4 lb Ground Chuck
1 onion diced
3 cloves garlic crushed
1 8oz can tomato sauce
1 egg
1 tube saltine crackers
1 tsp basil
1 tsp oregano
2 Tbsp soy sauce
2 Tbsp worcestershire sauce
1 Tbsp sugar
   ketchup for top

Stir it all up together. Spray a 10 inch cast iron skillet with pam.
Press meat into pan form a 2 inch hole in center and
slightly pull away from edges of pan. (think angel tube pan).
Keeps edges from getting to hard and center will be done.
Top with ketchup and spread thinly all over top of meatloaf.
Bake 55 min at 400 degrees. Check at 30 min to see if you
need to drain excess grease.

Mexican Rice

3 cups dry rice rinsed and drained
1 onion diced
4 cloves garilc crushed
2 cubes tomate de pollo Knorr bullion- chicken tomato bullion
1/4 cup veg oil
5 1/2 C water

Toast well drained rice in veg oil add onion on med high heat. Cook 5 min.
Add crushed garlic, bullion cubes, water. Bring to a boil,stir.
cover then turn to simmer for 15 min. Remove from heat and turn into
heat proof dish.

I use a 10 inch Cast Iron skillet fo this.
