Buttermilk Biscuits


 
preheat oven to 425
4 cups gold medal all-purpose flour
1/8 cup sugar
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt

1 in 1/2 Sticks of butter very cold
1 1/2 cup  buttermilk [I use regular milk with three tablespoons of vinegar added]

In a large bowl mix all dry ingredients together, take a cheese grater and great very cold butter into the flour mixture covering the butter flakes as you go with some of the flour that you have in the bowl. When you get all the butter grated in there pour your buttermilk in in batches about 1/3 at a time when you get it mixed turn it out on a floured board use a floured cutter cut your biscuits put into prepared large hot cast-iron skillet that has 1/4 cup of oil in it put one biscuit in there then flip the biscuit over so both sides of the biscuit have oil on it. batch makes 13 biscuits for me each time, it depends on the size of biscuit cutter that you use. Biscuits are  baked in a very hot oven for 20 to 25 minutes start checking your biscuits at 20 minutes it just depends on how hot that your oven is when the biscuits are done turn them out upside down on a wood cutting board.
